What is an extraordinary production process without the corresponding extraordinary technology?
Our premises consist of a 1000 m² large hall on one level. The floors in our processing department are tiled and all big fermentation tanks (from 1000 l upwards) and machines are made from stainless steel.
We are particularly proud of our micro-filtration plant. It is a cross-flow filter on the basis of ceramic modules, which is SPS controlled. The mead is pumped at high speed through tubes with only a few millimeter diameter without prior purification. As a result of this the clear and sterile mead (or also the liqueur and vinegar) can pass through the material, while the cloudy substances remain in the cycle, i.e., storage container. As no filter aids, such as filter beds are used and the device is only cleaned after filtration, significantly less color and aroma components are lost as in the case of some other processes.
The honey wine is filled into bottles cold sterile. That means the medium to be filled has not been heated at high temperature as this was how it had been done traditionally in the wine field and is still accomplished in the juice industry. Using a candle filter in front of the steam plant makes this wine sterile system germ-free. The cold sterile bottling method that we use is significantly gentler on the product than the hot bottling method and prevents rapid aging of the honey wine.
The process of our mead production is in accordance with the regulations for EU organic certified goods. The difference lies in the use of raw materials.
A small analysis laboratory assists us apart from the sensoric evaluation of honey and finished products in the quick registration of some other parameters. For more extensive examinations we rely on the expert laboratories of state institutions and state-approved food chemists.
Our office is fitted with modern electronic data processing equipment and is located in the middle of nature in the Bienenhof, our residence.
With our highly modern printers we were the first in the field capable of printing labels for customers. The present situation is that 80 % of the labels used are from our own production.
